Specializing in large, gourmet, lard-free tamales with an international flair, we use only the finest ingredients to craft our tamales. We also offer international catering services.

Tamales:

Pollo Verde:  Inspired by enchiladas suizas, this tamale contains shredded chicken breast, sour cream, Monterey Jack cheese, spices and our green sauce.  $12/Dozen

Red Chile Pork:  Our take on traditional tamales, made with prime pork, house chile paste and traditional spices.  $12/Dozen

Jerk Chicken:  Jamaican-inspired, made with shredded chicken breast, jerk sauce, Jamaican spices, scotch bonnets and a touch of orange sweetness.  As hot, or as mild, as you want them.  $12/Dozen

Pork & Green Chile: Southwest Tex-Mex, made with shredded prime pork, roasted poblano peppers, cilantro and traditional spices. Hopped up with fresh jalapeno, upon request. $12/Dozen

Barbecue Pork: Inspired by N. Carolina pulled pork. Shredded barbecue pork and spices in a hush puppy-styled masa.  $12/Dozen

Chipotle Picadillo:  Based on a Puerto Rican mainstay, made with ground beef, green olives, chipotle and traditional spices in a tomato-based sauce.  $12/Dozen

Jalapeno Popper:  Our take on grilled popper appetizers, made with cream cheese, jalapeno and bacon in a slightly sweet masa with whole kernel corn.  $12/Dozen

Black Bean & Queso Fresco:  South American inspired, made with black beans, cilantro, traditional spices and crumbled queso fresco.  Also available without cheese (vegan). $12/Dozen

Spinach, Feta & Kalamata Olive:  Greek spanakopita meets tamale, made with chopped spinach, crumbled feta, kalamata olives and greek spices. Opa!  $12/Dozen

Big Easy Bullets: Our version of New Orleans hot, wet tamale, half-size red chile pork tamales, kicked up a notch and simmered in a chile broth.  Traditionally eaten in one big bite with a saltine cracker.  $8/dozen with a broth packet.

Indian Lamb: Inspired by masala curries, made with shredded leg of lamb and traditional curry spices.  $ Market Price/Dozen.

New Tamales! Reuben and Corned Beef with Cabbage

Yup, you read it right, Reuben tamales...corned beef and sauerkraut in a rye inspired masa.  Sold along with homemade thousand island dressing for dipping.  If you like reuben sandwiches, these are fabulous!  I have witnessed a happy dance over them. 

Corned beef and cabbage tamales, delicious with a horseradish sauce, are made with a filling of corned beef and sauteed cabbage and a "masa" of mashed potato with caraway seed and other top secret, all natural ingredients.

They are available on a limited basis and are $7.50/half dozen or $15/dozen. 

We are contemplating some new varieties....as always.  Plus, we might be competing in a Spam cook-off. So, we have to dream up a delicious canned meat tamale with an appropriately spiced masa.

Hot New Tamales: Spinach, Feta and Kalamata - Opa!

Yep, vegetarians rejoice - the YaYa's are at it again.  This time with a delightful spinach, feta tamale with just enough minced kalamata olive to lend a subtle saltiness to the mixture.  They were well received over the holidays.  Pricing for the spinach tamales is $6/half dozen & $12/dozen.  To order yours, just shoot us an e-mail, we're yayatamales@gmail.com.

We're also working on a new creation in honor of St. Patrick's Day and our delightful Irish friends.  We will begin experiments on a corned beef and cabbage tamale soon.  Yes, Virginia, it does sound strange - but, when the YaYa's get involved, delicious things happen.  We'll keep you apprised of the progress and feedback on this one.

Christmas Tamales: Order Now, Please

Wow, time flies when you stay up to your proverbial elbows in masa!  We have been cranking out the tamales for the holidays.  Our red chile pork, which is a traditional tamale, has gone over like gangbusters.  We keep hearing that they are better than Abuela's, but, don't tell my family that.....now that is a compliment!

New this season, are Big Easy Bullets, modeled after the tamales once sold in the French Quarter.  These are half-size red chile pork, kicked up many notches and served "wet" after a good swim in some hot chile broth.  They are best eaten on a saltine cracker.  These little beauties are available for $7.50/dozen (that's the equivalent of just over one half dozen "big tamales", but, the little ones are more work).  They come with a container of  broth and some instructions.

Labor Day Orders

Labor Day is fast approaching!  To ensure that you have a nice supply of tamales for your celebration, please begin placing orders any ole time now, as we will need to schedule some production time to enure that you received the freshest product we can provide.  Tamales are a great appetizer for a holiday barbecue or fish fry, just saying.  Plus, our lard-free gourmet concoctions are better for you than standard issue queso and chips.

New Tamales Now Available: Pollo Verde & Pulled Pork

Yes!  The Pollo Verde AND Pulled Pork BBQ have ventured out of our collective thought bubbles and are a reality.  A delicious, lard-free, reality.  The Pollo Verde are chicken breast with sour cream and standard "verde" enchilada ingredients and the results are even better than expected.

If you like Carolina Pulled Pork, you will flip, or do a cartwheel at the very least, for our new Pulled Pork tamale.  Succulent pork and a tangy barbecue sauce are ensconced in a hush puppy-inspired masa.  These tamales scream "Southern Barbecue", once again, we've totally out done ourselves.

Each of these varieties sell for $6/half dozen, or $12/dozen.
